My name is Juan Jose Almanza, my career began when I was 13 years old. Even in my youth I liked preparing meals for my family’s events, showing my love for my family through my food. My first job was at 16, in a steak house in my native Torreon Coahuila Mexico. From that age I learned how to manage the intricacies of preparing different cuts of meat and other technical skills. After working at several different restaurants in my hometown, I moved to the states with my young family. At 21 I began from scratch at different restaurants in Green Valley, Arizona for 8 years I honed my skills, namely at Los Amigos and Quail Creek, my first job in Tucson was at El Merendero where I worked for 6 years. I moved on to the Tucson Country Club where I worked under Chef Robert Daniels, and Hacienda del Sol before I became head Chef at Jimmy’s American Bistro. After this I began a food truck under the Name of Mariscos Laguna named after my home town. I currently own El Taco Rustico, an authentic Mexican taqueria, that was named in the top 100 tacos in Tucson. I am dedicated to my craft, always exploring new methods and ingredient and committed to always doing things the best way possible.
